I find that so many parents of newborns (especially moms) have trouble finding time to eat lunch, or don’t think about keeping quick lunch items on hand for nourishment and energy. They end up reaching for empty calorie snacks instead, or skipping lunch altogether.  Here are some quick lunch ideas that I can make for you to keep on hand!

Cold Cut Roll Ups

turkey or ham slices, cheese slices, condiments

Chicken Salad

chicken breast, mayo, sour cream, lemon juice, salt, pepper. add-in options: celery, onion, slivered almonds, grapes, diced apples, craisins, pecans, pickles

Pasta Salad

pasta, italian dressing. add-in options: chicken, pepperoni, salami, cucumbers, tomatoes, bell peppers, broccoli, mozzarella, feta
